Ok, I’m embarrassed to admit this, but a few weeks ago while sleeplessly flipping channels late at night, I came across a special on the Home Shopping Network that I couldn’t turn away from. While I readily accept that I am a food tv-aholic, I have a hard time admitting that I purposefully watched a channel that sells useless trinkets and gimmicky makeup 99% of the time. However, when I saw Todd English, famed executive chef and restaurateur, selling GreenPans, I abandoned my usual assumptions about the HSN and set the remote down. I was sucked in, eyes wide, jaw on the floor, as Chef English and his team demonstrated the pan’s mind-blowing properties: 100% non-stick, non-toxic, and oven-ready, up to 900 degrees. No other piece of kitchen equipment can boast this trifecta.
I say mind-blowing with full confidence. Have you ever cracked an egg into a un-greased nonstick pan thinking that the pan, new or old, might actually live up to its name, and yield you a neat, whole, over-easy, only to find yourself making “i-meant-to-do-this” checkerboard scrambled eggs a minute later? Yeah, you know what botched eggs I’m talking about. Sure, they still taste good, but you’re not giving that to a guest. For the seasoned cook, this mishap will mean nothing, just a re-do, with some oil in the pan next time. For the beginner cook, this could mean discouragement and possibly less interest in cooking (clearly not a good thing!). So, when I saw Todd English and his team cooking with these pans, using no oil or fat to “saute” fish, make pancakes, and flip crepes, I knew these pans would be the perfect tool for a beginner cook in my life: my boyfriend. Since it seems to be the trend in blogs to not use real names, we’ll call him D.
D starting cooking in earnest about 6 months ago and has successfully ventured into the worlds of paninis, pastas, and omelets. In an effort to encourage him to continue cooking, I bought him a GreenPan and he’s never been happier or more confident in the kitchen! Not only is the GreenPan insanely non-stick, it can also withstand temperatures up to 900 degrees! Even with the gas flame maxed out, your stovetop doesn’t get hotter than that, and your oven and broiler can’t get close to 700 degrees, let alone 900. Unlike other non-stick pans that are coated in teflon (toxic at anything above a medium-low flame!), GreenPans are “Thermolon-based” and release no toxins into the atmosphere if overheated, thereby reducing our contribution to greenhouse gas emissions. If you’re skeptical about the harmful effects of teflon, check out this article, or google “harmful teflon” and see what pops up. I assure you, you’ll never spend $35 more wisely.
So of course, even though it’s D’s pan, I was dying to test it out for myself! When I made brunch last weekend I gave it the ultimate test: sunny-side up eggs, with no oil/fat in the pan to lubricate them. When making sunny-side up eggs, its only the egg white, pure protein, that touches the pan, so if these didn’t stick, nothing could. The result? Perfect, intact eggs. In fact, foods are downright slippery on this pan’s surface, even with no fat present! No makeshift scrambles in sight.

*No recipe this week, but here’s a pic of the resulting brunch dish I made from the sunny-side up eggs: Corn fritters (yup, same recipe as my earlier post) topped with guacamole, crispy applewood-smoked bacon, sunny-side up eggs and slices of raw milk cheddar.

Oh yeah, did I mention the health benefits of not needing fat to cook in this pan? No? Well, D and I figure, if we’re not using fat to cook our eggs, we might as well enjoy them with some bacon ; )

Why did you use oil on the corn fritters? I want to buy the green pan set but I’m really afraid of getting junk. I own the top of the line Calphalon nonstick pans but I still have to use a little oil.

I used oil to shallow fry the corn fritters because I wanted them to have that crisp-crunchy texture that only a frying in oil gives you, while avoiding a full-on deep-fried food. Its not that the corn fritters would have stuck to the pan, they definitely wouldn’t have, I just knew adding a little oil to the pan would help conduct the heat to the fritters better than if I had avoided using oil/fat altogether. I think using no oil would have resulted in a corn pancake rather than a corn fritter, if that makes sense. : )
That said, a corn pancake would have still been quite tasty, like everything else I have made using my greenpans without the help of oil/fat. I highly recommend them for absolutely any cooking technique, including even braising meats in the deeper one in the oven. The steamer attachment is also incredibly useful. The thing about the Calphalon pans and all other nonstick pans is that its not only frustrating to have to still use oil, but its also very hazardous to your health to cook with them above medium-low heat. Once you start cooking with them on medium to high heat, they release toxins into the air and your food, traces of which accumulate in our bodies over time and are stored in our fat cells. Since nearly everyone cooks with their nonstick pans above a med-low flame, and they can’t be used in the oven like the GreenPan can, the GreenPans are not only more useful, but more healthy on two levels: they reduce our ingestion of PTFE toxins in the teflon coating, and they don’t require the use of oil/fat (though can be used with fat, if you choose, as in the example of the corn fritters above). I bought from a friend the green pan set. But upon giving the box to my mother, the steamer set was taken by my friend. After my mom opened her christmas gift. With-in 5 min she said,” is there a steamer in here”? “I need a steamer: I always wanted a steamer” .
Well I have to be a good son so I logged on and to my surprise the steamer is only sold within purchasing the hole set. Is their a way I could complete my mothers wishes and get her the steamer?

hi i really like the whole greenpan idea and i hesitated for a while til i actually went to macy’s and saw them , but they were with the martha stewart collection. so i purchased the wok and both the 8 & 11 inch skillets, i was hoping that they would make stock pots or 5 quart dutch. do you know if any? i also logged on the green-pan website and noticed they had several different styles, how can i purchase them? where? thanks!

As for the 5qt dutch oven, it seems as though hsn carried them, but are now sold out. I believe HSN has sole rights to selling them, as I can’t find any other retailers online. hey maddy,
you have an interesting blog, i’m glad i found it while googling ‘greenpans’.
i was curious as to how these pans do on searing meat. If you’re not using oil, do you still get a nice crust on a steak or a pork chop? Since these are nonstick, do you still get fond when cooking meats? Are you able to use metal untensils? Thanks in advance for any info you can provide.

Thanks for your question and comments on my blog! I wondered the same thing about these pans and after many trials, I can honestly say they do create a nice sear on meat, pork, and poultry and leave a good amount of fond in the pan for making flavorful sauces. You can definitely use metal utensils while cooking with the GreenPans, but I don’t have much experience here since most of my tools are hard plastic or wood. Hope this helped
